Banana & weetabix snack cakes

September always reminds me of a fresh start, school and Autumn. As a busy mother of three energetic children trying to find a balance it is never been easy. Lets not go far, try to concentrate on a healthy eating, less stress, more reading, more music and more sleep.... That's my September mantra.... what's yours? Are you the only vegetarian in your family? Do you cook meat meals for your children? I do! I have decided to post some meat recipes that I regularly cook for my family, starting this late September!
For now, here is a classic banana cake with added breakfast cereal and few other yummy ingredients....  


3 crumbled Weetabix
100 gr dry fruits, chopped
50 gr chcolate chips
150 ml milk
100 gr brown sugar
2 eggs
2 large and ripe bananas, mashed
120 gr butter, melted
150 gr self-raising wholemeal flour
1 tsp soda bicarbonate
1 tsp ground cinnamon

Place the weetabix, dry fruits and milk in a bowl and set aside until all the milk has been absorbed.
Meanwhile, whisk together the sugar and eggs until pale, add the banana, butter, flour, soda and cinnamon.Finally, beat in the Weetabix mixture as well as the chocolate chips.
Spoon into a buttered tin of your choice, I used a round flan tin, 28 cm across. You can also bake into a rectangle shape tin or a loaf tin.
Bake for 40 minutes on 170 C or 1 hour if you bake it in a loaf tin.

note: keep the cake in a airtight container for one week in the fridge. 
How to make them healthy
- aim to get 18 - 20 portions . 100 gr sugar + handful of chocolate chip which is equivalent to 1/4 of sugar from your shop-bought snack

Yummy food over a busy weekend

It's been a busy bank holiday over here full of celebrating, cooking, eating, laughing, playing and more.
First, it was my 13th wedding anniversary which always involves a special meal and a nice bottle of something bubbly.
The very next day we celebrated my sister in law's birthday in a very nice Italian restaurant.
But that's not all, the day after, our youngest child turned four and that was a busy and exciting day for all of us.
Here is some of the food we enjoyed over the weekend!

Classic hummus in a company of a fresh french radishes 

300 gr cooked chickpeas
1 Tbsp tahini
juice of half lemon
3-4 Tbsp olive oil
salt and pepper
Place all ingredients into a food processor and blended until smooth.
Store in a glass jar in fridge up to 3 days.  

Baked squash with roasted veggies 

serve 4
1 butternut squash 
vegetables of your choice: peppers, courgettes, onions, broccoli 
cooked kale or fresh rocket leaves 
pumpkin seeds
salt and pepper
olive oil
Cut the squash into half, don't need to peel it.
Using a knife make a cross cutting at the top, season with salt and pepper and brush it with some oil.
Bake the squash up side down on 180 C for 30 minutes, then add the vegetables and turn the squash over.
Roast everything for further 20 minutes or until the veggies are done.
In a meanwhile, cook the kale and dry-roast the seeds.
Cut the squashes on half lengthwise and serve with the veggies sprinkled with seeds.

Strawberry cake 

200 gr fine flour
90 ml oil, I use coconut oil, melted
300 gr fresh strawberries 
2 eggs
90 gr brown sugar or 4-5 Tbsp honey
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla exstract
milk if needed

Place 200 gr fresh strawberries into a blender and blend until smooth.
Chop up the rest of the strawberries.
Place the wet ingredients in a large mixing bowl, whisk all up, add the dry ingredients and a splash of milk if cake mixture is dry.
Add the chopped strawberries and pour the mixture into a bottom loose cake tin, size 20 cm across.
Bake the cake for 20-25 minutes on 180 C.
Serve with custard and some fresh strawberries.

Peanut butter cookies 

220 gr spelt flour
1 tsp baking powder
4 Tbsp peanut butter
2 Tbsp coconut oil
4 Tbsp honey or maple syrup 
1 egg
1 tsp vanilla extract 
pinch of salt
50 gr chopped nuts, I used pecan 
50 gr currants 

Melt the coconut oil, add the peanut butter and set a side.
In a mixing bowl, place the dry ingredients, add cooled oil and butter mixture as well as the egg.
Mix everything using a wooden spoon.
Add the nuts and currants.
Scoop out a medium size cookie dough, form a cookie with your hands and place it onto a baking tray.
Repeat until you use all the dough.
You can make a pattern on the top, using a fork.
Bake the cookies for 10 - 15 minutes on 170 C.


Breakfast blueberry cakes

350 gr self-raising wholemeal flour
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon 
150 gr fresh or frozen blueberries
2 eggs
200 gr plain yogurt
100 ml oil
zest and juice of half lemon
1 tsp vanilla extract
100 gr mashed banana
4 Tbsp honey

Whisk together the flour, baking powder, salt and cinnamon in a bowl.
In a separate bowl whisk the eggs, add the yogurt, oil, zest and juice of lemon, vanilla, honey and mashed banana.
Fold in the dry ingredients followed by the blueberries.
Spoon the mixture into a muffin tin ( buttered ) for 12 muffins and bake for 25 - 30 minutes on 200 C.
Get them out as soon as they are baked and cool them down a little bit before eating.

Интегрални тортици со тиква / Wholemeal pumpkin cakes

No sugar? really? That was my kids reaction! They know what is good for them and I am so happy about it.
This cake batter can be used for small american style pancakes but I prefer this version as is less work and less smoky in the kitchen. I can't praise them enough, you've got to try them, of course you've got to love pumpkin taste, otherwise use apple sauce instead!

Потребно е :

3 јајца
70 мл масло
300 мл јогурт
150 гр пире од тиква
екстрат од ванила
пола лажиче цимет
220 гр интегрално брашно
2 лажички пециво
малку сол
60 мл вода

Измешајте ги сите мокри состојки, додајте ги сувите и измешајте убаво.
Ставете ја смесата во калап за мафини (намрсен со масло) и печете ги тортиците на 190 степени околу 20 минути.
Сервирајте ги исечени на пола со сецкана банана или друго овошје по желба.
За додаток користев јаворов сируп и мелено семе од чија.
Ако преферирате палачинки, пржете ги во тава по 2 минути од секоја страна.
Од оваа смеса се добиваат околу 18 палачинки (мали) или 12 тортици.


3 eggs
70 ml oil
300 ml yogurt
150 gr pumpkin pure
2 tsp vanilla extract 
1/2 tsp cinnamon 
220 gr wholemeal plain flour
2 tsp baking powder
little salt
60 ml water

Mix up the wet ingredients, add the dry ingredients and combine everything to get nice and smooth batter.
Divide the batter onto a muffin tin (oiled) and bake the cakes on 190 C for 20 minutes.
Serve them halved with some chopped banana and some maple syrup, sprinkle some ground chia seeds if you wish.
If you prefer pancakes, fry them for 2 minutes on each side.You should get about 18 small pancakes or 12 cakes.

Интегрални тортици со црешни / Wholesome cherry cakes

Cherries are my first love ever, I grow up climbing on our cherry tree, eating cherries there and then. I don't recalled how long the cherry season was lasting but the taste of the cherries is still very vivid to me. Now days I am happily buying cherries in shops still looking for that taste of my childhood......
This cupcakes are healthy version, wholemeal and sweetened  with banana and honey ...bliss ...

Потребни состојки:

140 гр интегрално брашно 
1 лажиче пециво
80 мл масло
1 пасирана банана + 3 лажици мед
50 гр јогурт
2 јајца
100 гр црешни ( семките извадени )

Во подлабок сад ставете ги сите состојки и измешајте ги со дрвена или силиконска лажица.
Наполнете 12 хартии за тортици, средна големина и наредете ги во калап за 12 мафини.
Печете ги тортиците на 180 степени околу 20 минути.
Оладете ги и посипете со шеќер во прав.


140 gr wholemeal flour
1 tsp baking powder
80 ml oil
1 mashed banana + 3 tbsp honey 
50 gr yogurt
2 eggs
100 gr cherries, pitted 

In a big mixing bowl put all ingredients and mix up with wooden or silicone spoon.
Fill up 12 cup cakes papers, small to medium size and place them into 12 muffin tin.
Bake the cakes on 180 C for 20 minutes.
Cool them down a little before you dust some icing sugar.

Тортици со боровинки / Blueberry cakes

Another  batch of cakes prepared in my kitchen for my children ............. even the neighbors got chance to try them and everyone was happy and everyone made the right noise mmmmmmm 

Потребни состојки:

80 гр мек путер 
80 гр кафеав шеќер
1 пасирана банана
1 лажиче екстрат од ванила
3 јајца 
200 мл млеко
1 лажиче сок од лимон
2 шољи од 250 мл интегрално брашно
2 лажички прашок за пециво
80 гр овесни снегулки
100 гр боровинки, свежи или замрзнати

Се матат со миксер путерот и шеќерот додавајки ги јајцата едно по едно.
Додајте ги и преостанатите мокри состојки како и бананата.
Додајте го брашното, овесните снегулки и пецивото. 
Мешајте со спатула и на крај додајте ги боровинките.
Ставете ја смесата во калап за 12 мафини ( намрсен )  
и печете ги тортиците на 190 степени околу 15 - 20 минути.


80 gr soft butter 
80 gr brown  sugar
1 mashed banana
1 tsp vanilla extract
3 eggs
200 ml buttermilk or use 200 ml milk + 1 tsp lemon juice 
2 cups of plain wholemeal flour
2 tsp baking powder
80 gr porridge oats 
100 ml blueberries, fresh or frozen 

Whisk the butter with the sugar in a big bowl, add the eggs one egg at the time.
Add the rest of the wet ingredients as well as the banana.
Combine the dry ingredients before adding them to the bowl.
Mix up the cake mixture with a spatula and add the blueberries.
Put the cake mixture into a muffin tin for 12 ( buttered )
Bake the cakes on 190 C for 15 - 20 minutes.

Тортици со банани, чоколадо и малини / Banana cakes with chocolate and raspberries

Skinny cakes that are full of surprising flavors! They are MUST HAVE cakes for family celebrations, parties or a weekend snack. I never use paper cases, because the cakes are getting stuck into them.  I think it is better just to butter the muffin tin and get them out while the cakes are still warm...

Потребни состојки:

2 и пол чаши интегрално брашно
1 лажичка сода
малку сол
2 лажици мед
2 - 4 лажици кафеав шеќер ( по желба)
2 пасирани банани
3 лажици јогурт
1 јајце
200 мл млеко
60 - 80 гр сецкано чоколадо
150 гр малини

Во подлабок сад за матење, ставете го јајцето, додајте го јогуртот и медот и матете со жица маталка.
Додајте ги бананите и шеќерот ако користите.
Матете кратко и додајте гу сувите состојки.
Додајте го и сецканото чоколадо предходно исмешано со една лажица брашно.Истресете вишок брашно.Вака приготвените чоколадни парчиња ке останат цели во тортиците.
На крај се додаваат и малините.Оставете 12 за одозгора.
Ставете ја смесата во калап за 12 мафини предходно намрсен со масло или путер.
Ставете по една малина одозгора и печете на 190 степени околу 20 минути.


2 1/2 cups of wholewheat flour
1 tsp soda bicarbonate
pinch of salt
2 tbsp honey
2 - 4 tbsp brown sugar ( optional )
2 mashed bananas
3 tbsp yogurt
1 egg
200 ml milk
60 - 80 gr chopped chocolate 
150 gr raspberries 

In a mixing bowl, whisk the egg with the yogurt and honey.
Add the bananas and sugar if you are using it.
Whisk shortly and add the dry ingredients, as well as the chocolate mixed up with one tbsp of flour. Shake off any excess.This keeps the chocolate pieces whole.
Now add the raspberries, reserving 12 for the top of each cake.
Oil or butter a muffin tin for 12 and divide the cake mixture into it.
Put the remaining raspberries on each cake.
Bake the cakes for 20 minutes on 190 C.

Лимон - ванила колач / Vanilla and lemon cake

Here is something nice, very refreshing, not so sweet and very flavorsome.... 

Потребни состојки:

200 гр бело брашно
1 мала лажича пециво
35 гр нишесте или 1 пудинг од ванила
80 гр шеќер
1 ванилин шеќер
пола мала лажичка сол
250 гр несолена урда
50 гр путер, собна температура
2 јајца
200 мл млеко или јогурт 
сок и кора од 1 лимон

Извагајте ги сувите состојки и измешајте ги.
Во посебен сад за матење,изматете ги јајцата, додајте ја урдата, путерот,млекото како и сокот
и кората од лимон.
Соединете ги сувите и мокрите состојки .
Намрсете калап за печење 10 х 30 см .
Ставете ја смесата во калап и печете на 180 степени околу 40 минути.
Оладете го колачот и посипете го со шеќер во прав.
Сервирајте со сезонско овошје !


200 gr plain flour
1 tsp baking powder
35 gr corn  flour or custard powder
80 gr sugar
1 tbsp vanilla sugar or 1 tsp vanilla extract 
1/2 tsp salt
250 gr quark cheese
50 gr butter, room temperature
2 eggs
200 ml milk or yogurt
juice and zest of 1 lemon

Mix up the dry ingredients.
In a separate mixing bawl, whisk the eggs, add the cheese,butter, milk and the lemon juice and zest. Add the vanilla as well.
Combine all the ingredients together.
Oil the baking tin, mine was 15 x 30 cm.
Pour in the cake mixture and bake on 180 C for about 40 minutes.
Cool it down before you dust some icing sugar.
Serve it with some fresh fruit..

Тортици со јагоди и боровници / Cakes with strawberries and blueberries

Easy recipe, ordinary ingredients, light and fluffy texture and buttery crumble on the top  .... 

Потребни состојки:

2 јајца
6 лажици масло
100 гр шеќер
250 мл јогурт
280 гр брашно
1 ванилин шеќер
2 лажички пециво
пола лажиче сода
малку сол
150 гр овошје
за трошките одозгора:
50  гр брашно
40  гр путер
25 гр шеќер

Во поголема здела ставете ги јајцата, додајте ги шеќерот и ванилата и матете со жица маталка.
Додајте го маслото и јогуртот и сите суви состојки како и овошјето.
За трошките ставете ги трите состојки во мала здела и со прсти трљајте го путерот во брашното и шеќерот да добиете трошки.
 Поделете ја смесата 
во премечкан со масло калап за 12 мафини,
 одозгора ставете ги и трошките.
Печете ги тортиците на 200 степени околу 20 минути.


2 eggs
6 tbsp oil
250 ml yogurt
280 gr flour
15 gr vanilla sugar
100 gr sugar
2 tsp baking powder
half tsp baking soda
pinch of salt
150 gr fruit ( chopped) 
for the crumble:
50 gr flour
40 gr butter
25 gr sugar

In a mixing bowl, whisk the eggs with both sugars,add the oil and the yogurt as well as all the dry ingredients.
Add the fruit .
For the crumble, put all ingredients in a small bowl and rub it with your fingers to get crumble texture.
Prepare a muffin tin for 12 by spraying some oil then pour in the cake mixture followed by putting the crumble at the top.
Bake the cakes on 200 C for around 20 minutes.

Инстант микс за палачинки или тортици / Instant mix for pancakes or cupcakes

Seriously, I can not survive as a mum feeding three kids without this mixture. It is so convenient, quick, healthy, tasty, freezable,if you need a snack or something for a picnic or lunchbox, this is it ....  

Потребни состојки:

600 гр интегрално брашно
1 и пол пециво
2 мали лажички сода
1 мало лажиче сол
40 гр ванилин шеќер

Измешајте ги сите состојки и чувајте ги во стаклена тегла.

кога ке ви требаат мали палачинки или тортици измерите:
150 гр од горенаведениот микс
1 јајце
250 мл ладно млеко
1 лажица масло
овошје по желба

Измешајте ги мокрите состојки, додајте го сувиот микс и мешајте со жица маталка, додајте го овошјето, исецкано на мали парчиња.
За палачинки,загрејте тава,намрсете ја и ставајте 2 лажици од смесата.Пржете ги палачинките по една минута од секоја страна.
Од оваа смеса се добиваат околу 15 мали палачинки од 8 см ширина.

Ако ви требаат тортици, тогаш наместо да ги пржите во тава, поделете ја смесата во калап за 12 мафини  (намрсен со путер)  и печете ги во загреана рерна на 190 степени околу 20 минути.


600 gr wholemeal flour
3 tbsp baking powder
2 tsp baking soda
1 tsp salt
40 gr vanilla sugar

Mix all the ingredients together and store in a jar.
When ready to make the pancakes or cakes just measure 150 gr of the mix,
add 1 egg,
250 ml cold milk
1 tbsp oil

Mix it all up with a whisk and add the fruit.
For the pancakes, drop 2 tbsp of the batter into a hot pan , flip them over after a minute.
You will get 15 pancakes, 8 cm in diameter.

For the cakes, divide the batter into muffin tin for 12 ( grease the tin first)
and bake the cakes in pre-heated oven on 190 C for 20 minutes.
