Freekeh, kale and avo salad


I've been detoxing a lot this month, nothing major or fancy, just eating more greens and more plant food such as whole grains, seeds and nuts.
This salad is one of my latest favorite lunch, it's ready in 12 minutes ....
I am entering `Eat you greens` which is hosted by The Veghog this month..🌿













Ingredients:


100 gr freekeh
1 avocado
4 handful of kale, stalks removed
handful of roasted seeds ( mixture of pumpkin, sunflower and sesame seeds )
salt and pepper
extra virgin olive oil 
lemon juice
 Soak the freekeh in cold water for 15 minutes. Cook the freekeh in a fresh water with a pinch of salt. Cook for 12 minutes for al-dente . For the last 6 minutes add the kale to be cooked together with the freekeh.
In a meantime chop the avocado and set a on a side.Drain off any water left from the freekeh/kale pan and stir in the avocado. Season with salt and pepper as well as olive oil and lemon juice.Divide into two plates and sprinkle some seeds on the top.

Protein rich loaf quick and easy version




December is one of the busiest month of the year but we love if. I personally love preparing everything homemade for the festive season and when the time is tight I always look for a quick and easy recipes but still tasty and healthy. This bread is everything what I need when I am in a hurry ! 



















Ingredients:

300 gr wholemeal flour ( I used spelt )
100 gr white flour ( again I used spelt )
50 - 70 gr nuts and seeds ( I used pumpkin, sunflower, flax and sesame seeds as well as almonds) 
all toasted 
1 tsp baking powder
1 tsp baking soda
1 tsp salt
450 ml water
1 Tbsp rolled oats for topping 


In a large mixing bowl, place all the dry ingredients.
Add the liquid little by little until you get a soft dough. 
Spoon the mixture into a loaf tin size 22 x 10 cm, greased.
Sprinkle the oats evenly over and bake in the oven for 40 min on 190 C and 15 more minutes on 170 C. 
Once baked remove from the tin and allow to cool on a wire rack.
Slice it and eat it on the day that it's baked. 
Freeze the sliced bread , you will thank yourself when you want a something nice and warm like toast, simply toasted straight from the freezer and enjoy it!

Здрави грицки за цела недела / Healthy snacks for whole week

It's true, they do last for a week as long as you don't snack a lot. Fantastic for dipping into hummus or simply nibble them as you wish. Lunchbox fillers, instant after school snack or walking in the park snack instead of crisps - they are perfect.

Потребни состојки:

100 гр семки од сончоглед
100 гр семки од тиква
100 гр сусам
50 гр чија или ленено семе ( обавезно мелени )
200 гр овесни снегулки 
1 лажиче сол
3 лажици маслиново масло
350 мл вода
по желба се додава ким и чурокот ( црн сусам )

Семките малку испечете ги во сува тава.
Овесните снегулки по желба се мелат а и не мора.
Сите состојки се мешаат во поголема здела и се додава водата малку по малку. 
Поделете ја смесата на 2 дела, секој дел се развлекува со сукало помеѓу 2 парчиња хартија за печење и веднаш се става во рамна тепсија. 
Одстранете ја горната хартија и печете 20 - 25 минути на 190 степени.
Повторете ја постапката и со второто тесто.
Ке добиете 2 тврди кори, оладете ги пред да ги искршите на неправилни парчиња.
Чувајте ги во убаво затворена кутија за пецива.


Ingredients:

100 gr sunflower seeds
100 gr pumpkin seeds 
100 gr sesame seeds 
50 gr chia or flax seeds ( grounded )
200 gr oats for porridge, grounded if you wish 
1 tsp salt
3 Tbsp olive oil
up to 350 ml water
extra adding can be a caraway and nigella seeds

Toast the seeds in non stick frying pan until they get a light golden colour.
Mix up all the ingredients, add the water gradually and make a dough.
Divide the dough into two.
Place each dough between two sheets of baking paper and roll it thin using a rolling pin.
Place it onto a baking tray, remove the upper baking sheet and bake it for 20 - 25 minutes on 190 C .
Repeat the same method with the rest of the dough.
You will get a two huge crispy and flat crackers, cool them down before you brake them into a irregular shapes. 

note: oats are naturally gluten free but if you are gluten intolerant you better get a oats that are packed in gluten free environment.

Колач со цвекло и семки / Beetroot and seed cake


I've tried this cake in my local church at a cake sale that is happening once in the month.  I am happy to be there to support my local church whenever I can.  The look of this cake made me order a slice despite the very good selection (my daughter went for the classic Victoria sponge) which I am sure was just as nice by the look of her face.  I finished my slice of cake and turned around to look for the ladies that bake all the cakes.  One of them was there but very busy, so I just quickly went closer to her and asked did she baked that particular cake because I want the recipe.  She answered quickly - Nigel Slater, beetroot and seed cake -  and carried on with her job.  I love Nigel as a cook, I have baked the cake the very next day and many times after that, I am still enjoying it like the very first time! 







Потребни состојки:


225 гр брашно
пола лажиче сода
2 лажички пециво
пола лажиче цимет
180 мл сончогледово масло или по желба
150 гр кафеав шеќер
3 јајца
150 гр рендано сирово цвекло
сок од пола лимон
70 гр суво грозје
70 гр печени секми ( сончогледови, тиквени, ленени )
прелив: 8 лажици шеќер во прав
сок од лимон 
мак
калап за печење со димензии 20 х 9 см 


Во сад за матење ставете го шеќерот, маслото и 3 жолчки. Матете ги со миксер.
Посебно изматете ги белките.
Ставете ги сите суви состојки во смесата со жолчки, додајте го сувото овошје и ренданото цвекло како и семките и сокот од лимон.
На крај додајте ги матените белки.
Смесата ставете ја во намрсен калап за печење и печете  на 180 степени околу 50 минути.
Оладете го колачот и прелијте го со преливот од лимон и шеќер и веднаш посипете со мак.


Ingredients:

225 gr flour
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp ground cinnamon
180 ml oil
150 gr brown sugar
3 eggs
150 gr raw beetroot, grated
juice of half lemon
70 gr raisins
70 gr roasted seeds ( sunflower, pumpkin, flax )
Icing: 8 tbsp icing sugar
lemon juice
poppy seeds
cake tin 20 x 9 cm

Beat the sugar, oil and 3 yolks in a mixing bowl using an electric mixer.
Whisk the whites separate until stiff.
Add all the ingredients in the yolk mixture and mix everything until nice and smooth, in the end fold in the whites.
Spoon the cake mixture into the cake tin, buttered, and bake it on 180 C for around 50 minutes.
Cool it before you pour the icing on the top.
Sprinkle some poppy seeds.
