Banana & weetabix snack cakes

September always reminds me of a fresh start, school and Autumn. As a busy mother of three energetic children trying to find a balance it is never been easy. Lets not go far, try to concentrate on a healthy eating, less stress, more reading, more music and more sleep.... That's my September mantra.... what's yours? Are you the only vegetarian in your family? Do you cook meat meals for your children? I do! I have decided to post some meat recipes that I regularly cook for my family, starting this late September!
For now, here is a classic banana cake with added breakfast cereal and few other yummy ingredients....  









Ingredients:

3 crumbled Weetabix
100 gr dry fruits, chopped
50 gr chcolate chips
150 ml milk
100 gr brown sugar
2 eggs
2 large and ripe bananas, mashed
120 gr butter, melted
150 gr self-raising wholemeal flour
1 tsp soda bicarbonate
1 tsp ground cinnamon

Place the weetabix, dry fruits and milk in a bowl and set aside until all the milk has been absorbed.
Meanwhile, whisk together the sugar and eggs until pale, add the banana, butter, flour, soda and cinnamon.Finally, beat in the Weetabix mixture as well as the chocolate chips.
Spoon into a buttered tin of your choice, I used a round flan tin, 28 cm across. You can also bake into a rectangle shape tin or a loaf tin.
Bake for 40 minutes on 170 C or 1 hour if you bake it in a loaf tin.

note: keep the cake in a airtight container for one week in the fridge. 
How to make them healthy
- aim to get 18 - 20 portions . 100 gr sugar + handful of chocolate chip which is equivalent to 1/4 of sugar from your shop-bought snack

Интегрални тортици со црешни / Wholesome cherry cakes

Cherries are my first love ever, I grow up climbing on our cherry tree, eating cherries there and then. I don't recalled how long the cherry season was lasting but the taste of the cherries is still very vivid to me. Now days I am happily buying cherries in shops still looking for that taste of my childhood......
This cupcakes are healthy version, wholemeal and sweetened  with banana and honey ...bliss ...








Потребни состојки:

140 гр интегрално брашно 
1 лажиче пециво
80 мл масло
1 пасирана банана + 3 лажици мед
50 гр јогурт
2 јајца
100 гр црешни ( семките извадени )

Во подлабок сад ставете ги сите состојки и измешајте ги со дрвена или силиконска лажица.
Наполнете 12 хартии за тортици, средна големина и наредете ги во калап за 12 мафини.
Печете ги тортиците на 180 степени околу 20 минути.
Оладете ги и посипете со шеќер во прав.


Ingredients:

1 tsp baking powder
80 ml oil
1 mashed banana + 3 tbsp honey 
50 gr yogurt
2 eggs
100 gr cherries, pitted 


In a big mixing bowl put all ingredients and mix up with wooden or silicone spoon.
Fill up 12 cup cakes papers, small to medium size and place them into 12 muffin tin.
Bake the cakes on 180 C for 20 minutes.
Cool them down a little before you dust some icing sugar.

Меден колач со банани и овес / Banana, honey and oats cake

This is a classic banana cake with a twist, adding oats and using honey makes this cake a healthy snack  for everyone ......



Потребни состојки:

1 чаша од 250 мл бело брашно
пола чаша интегрално
1 лажиче цимет
1 голема лажица пециво
пола чаша овесни снегулки
пола чаша сецкани ореви*
90 гр  мед 
2 јајца
1/3 чаша масло
1/4 чаша јогурт
2 зрели банани, пасирани

Измешајте ги заедно сувите состојки.
Во посебен сад ставете ги бананите, испасирајте ги со вилушка и додајте го маслото, јогуртот,медот и јајцата.
Мешајте со жица и додајте ги сувите состојки.
Колачот се пече во калап по желба, може во округол калап со размер 24 см , правоаголен средна големина или куглов.Како и да е, намрсете го калапот и посипете го со брашно, истресете го од вишок брашно пред да ја ставите смесата .
Колачот се пече 50 минути на 180 степени.
Оладете го колачот пред сервирање.
* колачот е испробан неколку пати без ореви, заменете ги со свежи или замрзнати боровинки!
Посипете со шеќер во прав или стопено чоколадо по желба!




Ingredients:

1 cup of 250 ml white flour
1/2 cup wholemeal
1tsp cinnamon 
1 tbsp baking powder
1/2 cup porridge oats
1/2 cup chopped walnuts*
90 gr honey
2 eggs
1/3 cup oil
1/4 cup yogurt 
2 ripe bananas 

In a big bowl mix up the dry ingredients.
In a separate bowl mash the bananas with fork and add the oil, yogurt, honey and eggs.
Combine the mixture with a whisk adding in the dry ingredients.
Bake this cake in a round cake tin 24 cm wide or in a medium size loaf tin.
I baked mine in a ring tin.
However, oil the tin you want to bake your cake, sprinkle it with some flour and shake it off the excess flour before adding the cake mixture in it.
Bake the cake for 50 minutes on 180 C
Cool it down before serving it.
*I have substitute the walnuts with fresh or frozen blueberries before for a change!
Sprinkle the top with icing sugar or pour over some melted chocolate if you wish!
