Flax seeds breads - kifla


For some reason I always want to have some sort of homemade bread rolls. These are so nutritious, easy to make and very tasty. I love to make a double batch so I can freeze some as well ....






Ingredients:

20g flax seeds
300 ml water
********************
300g white flour
200g whole wheat flour
1 pack of quick action yeast or 7g
100 ml milk or water
1 tsp salt
2 Tbsp olive oil

Place the seeds and the water into a small cooking pan, bring it to a boil and cook it for 5 min.
Cool the emulsion right down and add it to the flour and the rest of the ingredients.
Form a dough.
Knead the dough for 5 - 10 minutes.
Place the dough into a glass or plastic bowl, cover with clean tea towel and leave it to rest for 1 1/2 hour.
Punch down the dough and divide into 12.
Roll each portion using a rolling pin to get a flat bread.
Roll it in one direction and cut the edges using a knife.
Now you can decide whether you want them straight or curved or both :) like mine.
Arrange the breads on a baking tray, brush them with water and immediately sprinkle some seeds of your choice. I used caraway as well as freshly ground maldon salt.
Cover with the tea towel again and leave to prove in a warm place for 30 minutes.
Preheat the oven to 200 C .
Bake the breads for 15 - 20 minutes.

Експрес лепиња без квасец /Yeast free Instant flat breads

Happy Easter if you are celebrating! My country is celebrating Orthodox Easter called Велигден which is not until first of May. Since I am in UK I get to celebrate Easter twice and I am very happy about that. My children  are particularly happy because they get double fun that both Easter celebration can bring!
These flat breads are an ideal quick fix in my life, everyone loves them, especially with some homemade humus and slices of avocado. I can't praise them enough .............







Потребно е,

200 гр интегрално пченично брашно
180 гр овесно ( мелени овесни снегулки )
2 мали лажички прашок за пециво - без алуминиум*
70 гр овесни снегулки
50 гр семки од сончоглед
3 лажици ленено семе
3 лажици маслиново масло
1 лажиче сол
околу 300 мл млака вода 

Измерете и измешајте ги сите суви состојки, додајте го маслото како и водата.
Направете тесто, поделете го на 10 - 12 топки и развлечете ги тестата тенко.
На загреана тава пржете ги лепчињата на суво околу 3-5 минути од секоја страна.
Послужете ги топли наместо леб.
Може и да се замрзнат!

*Прашок за пециво без алуминиум може да се најде во продавници за здрава храна.

2 tsp aluminium free baking powder
70 gr porridge oats
50 gr sunflower seeds
3 Tbsp flax seeds
1 tsp salt
3 Tbsp olive oil
around 300 ml lukewarm water

Weight all dry ingredients, mix them all up and add the oil as well as the water.
Form a dough, divide it into a 10 to 12 balls and roll each ball flat.
You can simply use your palms.
Heat a non stick frying pan and dry fry the breads for 3-5 minutes of each side.
Serve them warm instead of bread.
Perfect for freezing!

Omega mix

This is amazing and so easy to get nourished, can't get easier that this,blend it, ground it, spoon it !
I will say few words about the benefit of the seeds: B vitamins, vitamin E,essential fatty acids, copper, zinc, antioxidants, magnesium, omega acids, calcium, fiber and more....
Omega mix is for everyone, give your body a boost all around the year.......Boom!









You will need:

3 parts flax seeds
1 part sesame seeds
1 part sunflower seeds
1 part pumpkin seeds

You will need a coffee grounder for this.
Simply ground all the seeds ( I ground them separate )
Store them in a clean jar in a fridge.


Sprinkle 1 tablespoon over your regular breakfast





Over your soup 




 Over any veg you like

Тортиљи од брашно од леблебија / Chickpea flour wraps

Tasty flat breads,vegan, gluten free, easy to make, quick preparation, freezable - I am so glad I discovered this recipe.......from Deliciously Ella   





Потребни состојки:

130 гр брашно од леблебија
2 лажици мелено ленено семе
1 мала лажичка суво оригано 
сол и бибер
масло за премачкување на тавата


Ставете ги сите состојки во здела, додајте 200 мл вода и мешајте со жица маталка.
Смесата треба да одмори 5 минути.
Загрејте ја тавата и премачкајте ја со масло.
Ставете 1/4 или 80 мл од смесата во тавата и печете исто како палачинка, 2 минути од секоја страна.
Премачкувајте ја тавата со масло пред секое печење.

Од оваа смеса се добиваат 4 тортиљи,препорачувам дупла доза.....

Идеја за полнење: рендан морков, хумус, патлижанчиња, туна, крем-сир,зелена салата или се што ке ви падне на памет ....






you will need:

130 gr chick pea flour 
2 tbsp ground flax seeds 
1 tsp oregano or any dry herbs 
salt and pepper 
oil for greasing 

In a mixing bowl put all ingredients except the oil.
Add 200 ml water, mix with whisk and leave the batter for 5 minutes.
Heat the frying pan, grease it with oil before you poor in 1/4 of the batter or 80 ml.
Cook for 2 minutes each side.
Grease the frying pan before you poor in the batter.
You will get 4 wraps from this quantities, I would recommend double batch .....

Ideas for stuffing: greeted carrot, humus, tomatoes, tuna, cheese spreads, lettuce or anything you like....
