Feta & cheese multigrain muffins

These multigrain muffins are from my late childhood when my sister got interested in baking. 
The original recipe is called  "Lepcinja so spanak" which means "spinach breads".
The ingredients are very much what we would have in our kitchen / larder all the time.
Now days I live in England but I still have corn meal and feta cheese at any time :) 








Ingredients:

150g white spelt flour
150g wholemeal wheat flour
150g corn meal
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
200g feta cheese, crumbled
250 ml yogurt
mixed with 125 ml water
4 Tbsp oil
2 large eggs or 3 medium size 
2 to 3 handful fresh spinach
sesame seeds 
soft butter for greasing the muffin tin


Mix the dry ingredients into a large mixing bowl.
Pour in the wet ingredients followed by the cheese. 
Mix everything and fold in the spinach leafs.
Grease the muffin tin and sprinkle generously the sesame seeds.
Spoon in the mixture and bake for 25 minutes on 190 C.










I love them sliced, toasted and served with soup. 
Best eaten warm. 
Freeze any left, defrost and take them with you for a picnic ....

Fruity Bruschetta with whipped feta

These bruschetta were perfect Sunday brunch for me and my family. There was an extra whipped feta for the children to dip in... 









Ingredients:

1 baguette , sliced
olive oil
100 - 150 gr feta cheese
3 -4 Tbsp thick yogurt
seasonal fruit, I had fresh figs and nectarines
Brazil nuts 
honey 
mint leaves

Toast the bread in a toaster, under a grill or in a grill pan.
Brush the toasted bread with extra virgin olive oil.
Crumble the feta, place it into a mug together with the yogurt, using a stick blender whip it until smooth.
Spread the whipped cheese on your toasted bread and arrange sliced fruit on the top.
Drizzle some honey and sprinkle some chopped nuts.
Mint leaves are obligatory :)

Погача со кефир и фета / Kefir and feta flat-bread

This flat bread is very easy and quick to make, I have made it for my children on their first day on summer holiday. They absolutely loved it and now they are demanding for it every single day.
Ever since, we have it with soup, we took it with us on picnic, we even share some with our neighbors.... 











somebody is enjoying it a bit too much :) 





Потребни состојки:

220 гр брашно
250 мл кефир, јогурт или вода ( испробано )
1 мало лажиче прашок за пециво
1 јајце
100 гр дробена фета сирење
2 лажици масло


Измешајте ги сите состојки освен маслото.
Во тепсија бр.28 ставете го маслото и загрејте ги во рерна на 200 степени.
Смесата од брашно истресете ја во вруќата тепсија и печете 20 минути или додека не добие темно-златна боја.



Ingredients:

220 gr flour
250 ml kefir, yogurt or water
1 tsp baking powder
1 egg
100 gr crumbled feta cheese
1 tbsp oil


Combine all ingredients except the oil.
Spread the oil in a round pot size 28 cm and put it in oven heated on 200 C. 
When the oil is hot, pour the batter in it and bake the flat-bread for about 20 minutes or until it get deep golden colour.
